Cacao fermentation is a two-phase microbial process driven by natural yeasts, lactic acid bacteria, and acetic acid bacteria:
Phase 1: Anaerobic Fermentation (Days 1–2)
Phase 2: Aerobic Oxidation (Days 3–6)
While some commercial operations use heap or basket methods, fine-flavor processors rely on tiered wooden fermentation boxes:
Fresh Wet Beans ──> Top Box: Day 1-2 ──> Middle Box: Day 3-4 ──> Bottom Box: Day 5-6
To avoid uneven fermentation or "purple beans" (under-fermented), turning schedules must be strictly maintained:
